Lacto-Fermented Salsa With Aronia Berries

Aronia berries are a healthy addition to our diet but they are extremely tart which can make them a challenge to use in recipes without adding sugar. I was apprehensive about trying them in a fermented salsa recipe but we love tart apples fermented in a salt brine so we gave it a try. Incredible! I will add even a few more Aronias to our next batch of Lacto-Fermented Salsa With Aronia Berries. Another concern was if the berries would turn the salsa into alcohol. Sixty days after fermentation the salsa is still perfect! In fact, the flavors have deepened. Definitely a successful experiment!

Lacto-Fermented Salsa With Aronia Berries

4 cups diced tomatoes

3/4 cup whole Aronia Berries

1 teaspoon sea salt

1 tablespoon minced garlic

1/2 cup diced peppers

1/2 cup diced onion

2 tablespoons lemon juice

Optional: 1/4 cup whey

Combine ingredients. Place salsa in jars leaving room for expansion. Place lid on jar and allow to ferment for 2 to 3 days stirring once or twice daily. Store in refrigerator.

Note: We used a mild jalapeno-type pepper in this recipe. If you use a hotter pepper you may need to adjust the amount of peppers called for in this recipe.
