Instant Pot Swiss Steak

This recipe creates a rich tomato gravy to serve over the meat, rice, quinoa or potatoes. Potato starch thickens at a lower temperature and is perfect for use  in Instant Pot recipes.

 

2 lbs. round steak cut into four pieces

1 tablespoon olive oil

4 cups crushed tomatoes

3 medium green peppers, quartered

3 garlic cloves, minced

1 tablespoon chili powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1 tablespoon potato starch

3 tablespoons water

In the Instant Pot liner, quickly sear the round steak in olive oil using the saute function. Cancel saute function and remove meat from liner. Add a large spoonful of crushed tomatoes to the liner and carefully scrape any browned bits stuck to the bottom.

Add remaining tomatoes, onion, peppers, garlic, chili powder, paprika, salt, pepper, basil and oregano into liner and stir to combine. Place round steak into liner and cover with tomato mixture.

Lock lid and program on manual/high pressure for 40 minutes. Allow pressure to naturally release for 15 to 20 minutes then perform a controlled quick release. Remove meat to serving platter. Thicken tomato gravy with 1 tablespoon of potato starch dissolved into 3 tablespoons of water using saute function if necessary.
