Instant Pot Ham, Potato And Corn Chowder
Comfort food at it's finest! Fast, easy and it serves a crowd! The cheddar cheese is optional but it does add extra flavor and helps to give this chowder it's thick and rich consistency.
Leftover ham bone with some meat still attached
2 cups of water
4 cups potatoes peeled and diced into 1 inch cubes
3/4 cup diced celery
1 small onion, diced
2 cloves garlic, minced
1/4 teaspoon ground black pepper
12-ounce can evaporated milk
2 cups frozen corn
Optional: 1 cup shredded cheddar cheese
Place ham bone and water into liner of Instant Pot. Lock lid and program manual/high pressure for 25 minutes. Allow pressure to manually release for 10 minutes then perform a controlled quick release. Remove ham bone to a plate to cool then remove remaining ham from bone. Dice ham and reserve for chowder.
Place potatoes, celery, onion garlic and black pepper into Instant Pot liner containing the ham broth. Lock lid and program manual/high pressure for 7 minutes. Perform a controlled quick release.
Add evaporated milk and shredded cheese if desired and stir. For a thicker consistency, stir in a tablespoon of corn or potato starch dissolved into 3 tablespoons of water.
Stir in ham and corn using saute function if necessary to heat through. Salt to taste.
