Instant Pot Enchilada Pie
Use this recipe for Enchilada pie to create your own version by adding meat, peppers, onions and other ingredients!
6 small corn tortillas
1 1/2 cups refried beans
3/4 cup plus 3 tablespoons enchilada sauce
3/4 cup Monterrey Jack cheese, shredded
Spread 3 tablespoons of enchilada sauce in the bottom of a 6-inch springform pan. Place two corn tortillas in the pan. Spread 1/2 cup refried beans followed by 1/4 cup enchilada sauce and 1/8 cup shredded cheese on top of tortillas. Repeat in two more layers. Add an additional 1/4 cup of shredded cheese to top.
Cover springform pan loosely with foil. Place 1 1/2 cup of water in Instant Pot liner. Put springform pan on top of trivet into liner. Program Instant Pot for manual/high pressure for 15 minutes. Allow pressure to naturally release for 10 minutes then do a quick release. Remove springform pan from the Instant Pot and allow to cool for 10 minutes. Gently run a knife around pan to loosen the pie. Remove band. Serve with shredded lettuce, sour cream and salsa if desired. If adding additional ingredients, increase cooking time by 1 to 3 minutes.
