Instant Pot Cabbage and Tomato Soup With Beef Or Pork

All of the vegetables in this soup are raised in our garden but are also readily available at local farmer's markets. We make the beef broth from local mostly grass-fed beef (see recipe for Instant Pot Bone Broth). Our pork and beef are raised by local family farmers.

1 lb. ground beef or pork

1/2 cup diced onion

1/2 cup diced celery

1/2 cup diced carrot

1 1/2 teaspoon salt

1/2 teaspoon pepper

1 tablespoon minced garlic

4 cups beef stock

28 ounces crushed tomatoes (3 1/2 cups)

6 to 8 cups chopped green cabbage

1 fresh bay leaf or 2 dried bay leaves

Brown ground beef or pork using the saute function of the Instant Pot. Cancel saute function and remove meat. Drain if necessary. Saute onion, celery and carrot with salt, pepper and garlic for 1 to 2 minutes. Cancel saute function. add a splash of beef broth to liner and deglaze pot. Add remaining ingredients along with beef or pork and stir. Program the Instant Pot on manual/high pressure for 20 minutes. Naturally release pressure for 10 minutes then perform a quick release.
