Instant Pot Brown Rice (Pot In Pot)

Have you ever wondered about that little measuring cup that comes with your Instant Pot? It is meant for measuring rice and it not a true one-cup measure. The pot in pot method of cooking in a pressure cooker means you will place water into your liner and put a smaller pot on the trivet to use for cooking the food. This method of cooking results in perfectly cooked brown rice every time. Be sure to thoroughly rinse rice before cooking.

Place 1 1/2 cups of water into liner. Insert trivet into liner. Measure 2 cups of brown rice with the rice cup that came with your Instant Pot. Thoroughly rinse rice and place in smaller pot. Stir 2 conventional measuring cups of water into the rice. Place the smaller pot onto the trivet. Program Instant Pot on manual/high pressure for 8 minutes. Allow pressure to naturally release for 10 minutes then perform a quick release. Fluff rice with a fork and serve.
