Instant Pot Bone Broth

Don't toss that poultry carcass or beef and pork bones! Bone broth is so easy to make in the Instant Pot!

Place poultry carcass or beef and pork bones into the Instant Pot liner. Toss in a couple handfuls of celery, carrots and an onion or two. Add a bay leaf and 2 teaspoons of salt. The secret to a good bone broth is raw apple cider vinegar. A tablespoon or two will draw the collagen from the bones giving the broth it's wonderful gelatinous texture. Fill the liner two-thirds full of water. Lock the lid on the pot and program on manual or high pressure for 120 minutes. When finished let the pressure naturally release. Strain broth through a colander. Cool and skim the fat which will collect at the top.

Bone broth can be frozen or pressure canned. When pressure canning be sure to follow proper canning instructions. When making broth to pressure can use canning salt for this recipe.
