Instant Pot Beef Heart
Beef heart was something my mother-in-law prepared for her family when they were growing up on the farm. We received a heart with our last beef and used the Instant Pot to cook it. Pressure cooking resulted in a moist and tender cut of meat resembling a roast. We shredded it and served it in soft taco shells with the usual Mexican fixings but it could easily be substituted for roast in other recipes. Beef heart is very high in nutritional value.
Cut beef heart into three pieces. Remove fat, arteries and silver skin. Note: After completing this process our beef heart weighed 2.08 lbs.
Pour 4 cups of beef broth into Instant Pot liner. Lay the pieces of beef heart evenly in bottom of liner. Add 3 garlic cloves, a bay leaf and sprinkle heart with salt and pepper. Cover beef heart with one sliced onion and a handful of roughly chopped celery.
Lock lid on Instant Pot and program on manual/high pressure for 60 minutes. Allow pressure to naturally release for 25 to 30 minutes then perform a controlled quick release.
